Three grapes from three different parcels, each with its own treatment: Souvignier Gris spends one week on the skins, Johanniter three, and Riesling is pressed straight off. Everything is blended and bottled with nothing added, nothing taken away. It’s bright and lifted, with a tannic backbone that never loses focus. We kept a bottle open for three weeks and it was still standing there, chest out.
